No issues with the fridge. Ran fine with the solar we produced, which averaged about 1.2kWh per day from a 400W system. We did have to apply some emergency velcro to keep the doors shut, had a small issue where I entered a hard right turn and flung a container of bolognese across the vehicle.
The 110V 4.5 gal water heater is definitely a power suck. It worked great for a quick shower, but we inadvertently left it running. The next day we drove into a blizzard passing through colorado. The resulting combination of high power draw from the water heater, and no solar production nuked our batteries by about 4pm the next day. Definitely something you want to budget power for, use sparingly, and ensure that you turn off as soon as you are done. When the water heater was heating, it was pulling about 150A @ 12V.
We definitely want to install a B2B charger, so that we're not worried about poor solar production due to low sun angle and weather.
