I have a mostly-complete interior from my 118" Sprinter which consists of three components. They are all constructed of welded 0.5in steel tubing with plywood tops. Two sections comprise the bed and table and a spot for storage drawers and there is a separate "kitchen" with countertop with sink, foot pump mounting point, water storage and a fridge slider (for a large Whynter, which can also be sold with it for an additional amount).
All of the pieces can be removed with bolts which mount to the D-ring tie down points. There are additional mount points which can bolt to riv-nuts which you could add to your van. Components fit a 118" wb, but if the D-ring tie downs are the same the kitchen can work in a longer van. The interior wood panels are removed but can be added back in, I used self-tapping sheet metal screws.
I'd pretty much just like to get cost of materials which is around $300. I'd like to see it go into a new van as mine is getting sent to the farm upstate soon, so the price is negotiable. The quality is good but I'm not a master craftsman.
