The triple nut does a few things, but one is that I can use one hole to align while putting screws into the other two holes. I do this routinely.
It does help spread out the loads and keeps things in place / deal with vibration from what I have experienced.
Triple economy nut is used when you need to prevent the part you are bolting to the 80/20 from rotating. Bolt handle in both end holes to move nut and a set screw in middle hole to lock nut in place. Two bolt handles used to be sure end bolt holes are centered in the slot.
Double economy nut used when you want a handle to move the nut to the correct location. Put a bolt in one hole for the handle and a set screw in the other hole to lock the nut in place. Remove bolt handle and use that hole for attachment.
Using economy nuts in vertical 80/20 with a handle allows moving nut to the location desired.
