Default Clicking relay...

2016 4cylinder with 73,000 miles.

Occasionally this relay will click after shutting down the engine. Key in or removed it does it. Random length of times from a few clicks to to 10 minutes or so. When I had the van in for airbag and DPF replacement I asked them to check it out. They had no idea as as they couldn't get it to click while in their shop.

It's the gray relay right above the fuses.

Any ideas what's going on?

Most likely tank purge, but scan the van for codes just in case.

It's been scanned by both the Mercedes Service tech and myself..... no codes.

Please explain what the tank purge is.

I've crawled all around the van when its clicking and haven't heard any other noises like a pump or such.

I am new to Sprinters, so allow some margin error for my guess, but that is common question on diesel sedans forum.
When you start your vehicle cold and drive it into warm day, the fuel tank pressure increase with heat and driving motion. Some of the vapors can be directed into engine intake, when engine is running, but the system has purge valve that keeps the tank below certain pressure and it likes to click when you stop vehicle on hot day.

Hmm,,, my GLK with the same engine has never done this. I haven't noticed any correlation to ambient temperature. It did it again today. Started off at ~50F this morning... drove 2.5 hours up into the mountains where it was in the 40s. Pulled into a parking lot, turned off the engine and about 30 seconds later the clicking started. Clicked for the whole 10 minutes or so i was sitting there.

You are talking about secondary evaps which is confined to gasoline & liquefied gas operated ICE's in motor vehicles.,
Diesel powered vehicles do not have secondary evaps.
