Default Are recipes required for soups and casseroles?

I decided to make a tuna casserole tonight for dinner.

While I was prepping things my wife came into the kitchen to help. The first thing she asked was "What recipe are you using?".

Hmmmm. I don't often make casseroles, but I do make quite a few soups. Recipe? You should know by now. There is no recipe for soups or casseroles. I think that I threw her off by mentioning that I was making a Tuna Casserole not a tuna casserole. I'm sure that when her Mom made Tuna Casserole it was always the same each time.

That isn't how I put things together. When someone says that they really like one of my particular soups generally my reply is "Enjoy it now because I'll never be able to duplicate it."

The point of this thread?

When making soups, stews, casserole type meals do you follow a recipe? Most of the time I just look in the cupboard and refrigerator to find the ingredients for that particular meal. Eg. - I never make omelettes. I often make throw together mixed eggs for breakfast.

P.S. - My renegade methods are curtailed when I attempt to bake. I've learned that baking needs to be more precise.

Not for me.

Most of my soup recipes originate from a) what I need to use up in my fridge or food box, and b) my imagination.

Occasionally I am inspired from something I've read or smelled.

No two soups have ever been the same.......

Guys depends upon what you are doing.
If you are preparing something high end such as Haute French Cuisine then its imperative to follow the recipe to the letter. Then practice and perfect/hone your skills.

August Escoffier receipes are the benchmark to follow.
I suggest you arm yourselves with the modern version of Escoffier and Larousse Gastronomique .

I have both ! With the intention shortly to purchase (out of experimental curiosity) one by Chef Paul Bocus.

Otherwise something will be lost in the presentation and taste !

Cooking is a hobby of mine, and having attended cooking classes in France & Italy in my youth , then latterly having been married a trained chef and Grad from Denver U in hotel & restaurant management, I could get compliments on the final presentation from a professional in the business.
Of course these days I have again some additional expert guidance from two chefs I partner with, all trained in the American schools of culinary arts.

If I can find the time I have an ambition to attend a few courses at the School of Cordon Bleu cooking in Mexico City. Mexican regional food is highly specialized with techniques and is vastly different from what most consider is Mexican cuisine in North America.

That is the beauty of those dishes, no recipe needed.
How you like it with whatís available is the ticket.

Like you state certain cuisine realms require exact measures, temps and times.
Above my patience level, these kind of foods are a treat Iíll thank someone else for doing.

I like to make a pot of Bison chili every once in a while. Chicken soup in the pressure cooker goes really fast. Bison burgers, bison steaks, I like bison , hardly any fat, and when you grill it the flames do not flare up from grease. I will usually get a bison burger medium rare at the diner, because they are the only ones that sell them. Medium rare because any more done makes this fat free meat too dry.

A bit off topic, but relates to not following a recipe.

I met a friend for lunch today at a local pub. He always looks over the menu, and then we order the nachos to share as always. Today he threw a curve ball by asking for Swiss cheese to be substituted. It sounded odd to me, but what the hell.

Damned if it didn't go well with the grilled chicken, salsa and chips. I guess that you just never know until you try.

Here is an emphasis on precision and following fine cuisine to the letter --otherwise its crap!!!
Like fixing a Sprinter really--be precise and follow the rules.
