NO!
Your Sprinter has a 12v system.

Your drawing shows the two yellow tops as being drawn in series.
Which the rest of us think is an error in the drawing.

If that is the absolute case I can throw an converter between the two starting batts to step it down to 12v then run it through the DC2DC charger. That should work right?
99.95% chance that it's NOT the case, and that merely the drawing is wrong.
(the rest of us only have one starting battery, not two in parallel).

Okay great. I do have two batteries that came in the rig already but the previous owner doesn't know if they're both hooked up or not. Shouldn't I hook up both starting batteries in parallel to get 12v & 200ah or is there no need for two starting batts?

The Sprinter is quite happy with a single 95AH starting battery.
MB was also happy to sell you a 2nd 95AH battery (connected by an isolation relay) as an "auxiliary battery".

If you're not planning on hanging lots of loads off the starter battery, a single yellow top should do (if it's rated for "multi-purpose" or "starter" service ... i forget the Optima rating/color schemes)
If a Yellow Top is only rated as "deep cycle", it's not a good choice as a starting battery.
