Rear Cargo Light

Does anyone know where to get a switch that has the capabilities that the rear overhead cargo light has, I want to replace the light, but keep the 3-way feature, and mounted on the wall

That greatly depends upon what lighting options you have in your Sprinter.

Some are basic (the fixture has three wires: Battery+, Ground and "door ajar"), in which case it might be a simple
"single pole double throw center off" (SPDT, center off)
switch.
If yours is this flavor, the "door ajar" line is pulled to ground when the door is ajar. (otherwise it just "floats", tied to nothing).
This is the "classic old style" of doing it... the Battery+ goes to one end of the bulb, the other end of the bulb goes to the "moving contact" of the switch ... the two fixed contacts of the switch go: one to ground (flipping the switch to that gives you "steady on") and the other fixed contact is tied to the "door ajar" wire.
(in the T1N the switches that connect the "door ajar" wire to ground are simple switches in the door frame.
The NCV3 evidently has a relay in-between.)

Here is a "generic" switching example... the colors are for the T1N:

The NCV3 colors (if it's that simple switched unit) are:
Gray with a Brown stripe -- for "door ajar"
Brown with a Dark Blue stripe for "ground"
and Red for Battery +

Some other NCV3 Sprinter options have two "single pole single throw" switches in the rear fixture.

Some have complicated electronics inside the lamp unit, and there is no "simple switch".

Some (like that last one) are controlled in strange ways by the Body Control Module, and messing the signals up could damage that unit.

If the colors at your lamp do NOT match the three colors i listed above ... be very very careful (or reconsider the task)
