Is it possible to test the level sensor without having to support the engine and remove the cross brace just to get at it. Possibly Ohm it out or something?

Yes the actual values can be diagnosed by MB with sensor overview.
The control unit is No 88, for oil level it's measured in units of [mm]: 87 for oil quality 44 for oil temperature.Each has a specifed value and an actual current value per unit, engine must be running at idle.

Like Richard said, the only complete way is Star diag.

Its actually a kind of PWM signal. It gives a burst of 3 pulses every few seconds. The high-time of each pulse in the burst gives each of the 3 measurements - temp, level, quality. I guess if you had a scope you could see if it was putting out pulses at least.
