We wanted to put in a aftermarket DVD player, back up camera, and radio----but my husband has heard that it will effect your warranty.....has anyone had any issues with this?

The answer will purely depend upon the quality of the installation.
If they butcher the job of drilling a hole for the camera wiring, then the rust-penetration warranty *in that area* may be compromised. If they damage things running wires from the rear to front, then any collateral damage won't be covered. The front unit installation *should* just be a "drop-in", but if they make all sorts of poorly thought-out cuts and splices in the wiring, then anything's possible in terms of damage that won't be warranty covered. (does your Sprinter already have a radio? If so, the new installation will (or should) use that connector, and the warranty should be safe). Choose a reputable shop that provides its own good warranty, one that includes later-discovered damage to the vehicle. --dick
